bought this smoker because it was the only one that had any reviews. I've owned a charcoal smoker that was vertical cylinder type for ten years. like the ease of propane over the charcoal ready to go in minutes. Cooked a 14 lb turkey in six hours. after that I loaded a 10 lb ham and TWENTY pounds of pork spare ribs. everything came out great!!! whole family very impressed with my new toy! this was a gamble that paid off since I never used it until EASTER sunday for the first time. like the other reviews I read I Agree with them. Example : not a fan of the phillips head screws for the handles. Solution: went to [...] and picked up hex head screws and was able to improve the sturdiness. (screws are metric) water pan holds exactly 2 quarts of water. the recipes I used call for four quarts but wasn't an issue. temp dosen't get below 225 degrees. one reviewer stated that he drilled 3/4 inch holes on top and used wine corks to plug them when desired temp was reached. I too would consider modifying it but from the sides with fully closing vents from another type of grill. My reason being is that when I finihed the turkey I put it on top of the smoker covered up and it stayed nice and warm. smoker is light weight easy for two people to move. I put mine on a wheeled platform dolly so I can put it in the garage when not in use.
fast shipping suprised I received it in three working days. arrived in good condition. one grid rack had a defective wire. wasn't an issue I still was able to use it. customer service good. sending replacement part out today

I had worked for a national bbq chain and missed the smoked ribs after leaving that job. Had ribs the other night for dinner and was surprised how they matched the flavor that I was accustomed to from using a large commercial smoker. Kept a constant temperature during the smoking process.
Can't wait to taste smoked pork butts for sandwiches.

The Bayou Classic is very easy to use and regulate heat. I've used it several times since Thanksgiving and my only problem was one of the be-be's that keep the door closed popped out. Thank goodness I found it and the spring, could have been hard to find a replacement since that part does not show up in the parts list. Nice size smoker, easy to use. I would recommend this.

For slow cooking the temp at the LOW SETTING was too high (350) so I drilled 15 holes in the top at 3/4 inch diameter to vent the heat. The temp now dropped to 250 deg. To increase the heat, I stick wine-bottle corks in the holes until the heat increases to the desired temp.
